Method
- Place four tortillas on a cutting board. These will be the tops of the quesadillas.
- Using a small sharp knife, carefully cut two triangle-shaped eyes, a small triangular nose, and a simple jagged smile into each top tortilla.
- Leave the remaining four tortillas whole. These will form the bottoms of the quesadillas.
- In a medium bowl, combine the cheddar cheese, Monterey Jack, smoked paprika, and garlic powder.
- Place one whole tortilla in a large skillet or on a griddle over medium-low heat.
- Sprinkle one-fourth of the cheese mixture evenly over the tortilla, leaving a small border around the edge.
- Add a thin layer of cooked chicken, diced bell pepper, or green onions if desired.
- Place one cut-out tortilla over the filling. Gently press it down with a spatula.
- Brush the top tortilla lightly with melted butter or olive oil.
- Cook for 2–3 minutes, until the bottom is golden and the cheese begins to melt.
- Carefully flip the quesadilla. Cook for another 1–2 minutes, until the second side is lightly golden and the cheese is completely melted.
- Transfer the quesadilla to a cutting board and let it rest for 1 minute.
- Repeat with the remaining tortillas and filling.
- Serve warm with salsa, guacamole, and sour cream.
Notes
Cut the pumpkin faces before assembling the quesadillas. Cutting them afterward may push the melted cheese out.
Use orange cheddar so the filling resembles the glowing interior of a jack-o’-lantern.
Cook over medium-low heat. High heat may burn the tortillas before the cheese melts.
Do not overfill the quesadillas because excess cheese may escape through the face openings.
For the oven method, bake the assembled quesadillas on a parchment-lined baking sheet at 400°F for 8–10 minutes, carefully flipping them halfway through.
An adult should cut the tortilla faces. Keep sharp knives away from children.
Refrigerate leftovers in an airtight container for up to 3 days. Reheat them in a skillet, oven, or air fryer.
