Ingredients

  • 1/2 cup unsalted butter softened
  • 3/4 cup creamy peanut butter
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups old-fashioned rolled oats
  • 3/4 cup semisweet chocolate chips
  • 3/4 cup candy-coated chocolates preferably Halloween colors
  • 24 to 48 candy eyeballs for decorating

Equipment

  • 1 Large mixing bowl
  • 1 Medium mixing bowl
  • 1 Electric hand mixer
  • 1 Baking sheets
  • 1 Cookie scoop
  • 1 Rubber spatula
  • 1 Wire cooling rack

Method

  1. In a large mixing bowl, beat the softened butter, creamy peanut butter, brown sugar, and granulated sugar until smooth and creamy, about 2 minutes.
  2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the peanut butter mixture. Mix just until combined.
  5. Fold in the rolled oats, chocolate chips, and candy-coated chocolates using a rubber spatula. Reserve a few candy pieces for decorating the tops.
  6. Cover the cookie dough and refrigerate for 30 minutes. This helps prevent excessive spreading.
  7. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  8. Scoop approximately 2 tablespoons of dough per cookie and place the portions about 2 inches apart on the prepared baking sheets.
  9. Gently press a few reserved candy-coated chocolates onto the tops of the cookie dough balls.
  10. Bake for 10–12 minutes, or until the edges are lightly golden and the centers appear just set. Bake in batches as needed.
  11. Remove the cookies from the oven. While they are still warm and soft, gently press one or two candy eyeballs onto each cookie.
  12. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
