  • 1 can tomato sauce 8 ounces
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup water if needed
  • For serving
  • 1/2 cup shredded cheddar cheese optional
  • 2 green onions thinly sliced
  • Chopped fresh parsley optional
  • Sour cream or plain Greek yogurt optional

Equipment

  • Large rimmed baking sheet
  • Parchment paper
  • Large skillet
  • Cutting board
  • Chef’s knife
  • Wooden spoon
  • Measuring cups
  • Measuring spoons
  • Fork

Method

  1. Prepare the oven
  2. Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  3. Prepare the sweet potatoes
  4. Wash and dry the sweet potatoes thoroughly. Pierce each potato several times with a fork. Rub them with olive oil and sprinkle with salt.
  5. Bake the sweet potatoes
  6. Place the sweet potatoes on the prepared baking sheet. Bake for 45 to 55 minutes, depending on their size, until they are completely tender when pierced with a fork.
  7. Brown the ground beef
  8. While the sweet potatoes bake, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it into small pieces, until browned. Drain excess grease if necessary.
  9. Cook the vegetables
  10. Add the diced onion and green bell pepper to the beef. Cook for 4 to 5 minutes, stirring occasionally, until softened. Add the garlic and tomato paste and cook for 1 minute.
  11. Make the Sloppy Joe sauce
  12. Add the tomato sauce, ketchup, Worcestershire sauce, apple cider vinegar, brown sugar, mustard, smoked paprika, chili powder, salt, and black pepper. Stir until evenly combined.
  13. Simmer the filling
  14. Reduce the heat to medium-low and simmer the mixture uncovered for 8 to 10 minutes, stirring occasionally, until thickened. Add a small amount of water if the filling becomes too dry.
  15. Stuff and serve
  16. Cut each baked sweet potato lengthwise without cutting all the way through. Gently open the potatoes and fluff the centers with a fork. Divide the Sloppy Joe filling among the potatoes. Add cheddar cheese, green onions, parsley, sour cream, or Greek yogurt as desired.

Notes

Choose sweet potatoes that are similar in size so that they finish cooking at approximately the same time.
The potatoes are ready when a knife or fork slides easily into the thickest part.
The ground beef must reach an internal temperature of 160°F.
For a less sweet filling, reduce or omit the brown sugar. Check the ketchup label if you need the recipe to be gluten-free.
The sweet potatoes and Sloppy Joe filling can be prepared ahead and stored separately.
Refrigerate leftovers in airtight containers for up to 3 days. Reheat thoroughly before assembling and serving.
